The main difference lies in the carbon content. 309 stainless steel has a higher carbon content (up to 0.20%), while 309S stainless steel has a lower carbon content (up to 0.08%). This lower carbon content in 309S provides improved weldability and resistance to intergranular corrosion compared to 309 stainless steel.
